Need: Cooked instant mashed potatoes (4 servings) 1 egg white 2 1/2 tbs. bacon bits 1tbs. cilantro dried handful shredded cheese (your choice I used cheddar) 1/4cup flour 1/2 red pepper 1/2 yellow pepper 1/2 red onion. Mix up all, excepts peppers, onion and cheese. When well blended add in remaining. Cook in skillet on medium in small spoonfuls; cook 3-5 minutes per side. Serve with some sour cream (optional).
