Heat oil in skillet. Add onion and pepper to oil cook until slightly soft; add in parsley.Season with coarse salt and pepper. Continue cooking until soft and slightly browned. Remove to medium glass bowl. Turn the heat up slightly. To "dice" my bacon I like to take some kitchen scissors and cut it that way. Makes it easier to do.When the pan is up to heat add in bacon and cook until almost crispy. You don't want hard chunks of bacon inside your pork it won't be very pleasant. It can be crispy, but just don't make it too crispy. When you mix it with the pepper and cheese it will soften up a little bit. When your bacon is cooked add it on top of your peppers in the glass bowl. Grab a smaller skillet and add a tbs or less of bacon grease and heat over medium low. When it's up to temp add in spinach only cook for about 10-15 seconds. Just a quick fry will do. Spinach is delicate and doesn't take much to cook. Really you just want it to get the bacon flavor in it. Add it to the peppers and bacon. Set aside; let cool. Once you have your pork loin cut open its time to season it. You can just keep it simple with some coarse salt and pepper, but I also added a Mesquite rub to mine for an extra kick to the pork. Drizzle olive oil onto the pork and sprinkle with seasonings on both sides. your cut side is the side you want to add your stuffing to. Go back to your peppers and mix it all up; try it does it need a little salt add it. Is it spicy enough? Add some chili powder if you don't think it's spicy enough. Mix the cheese into the peppers. Spread mixture into the pork leave about a half inch space all the way around. Spread it on kinda thick, but make sure it's evenly spread. You may have some left over that is okay. I made mashed potatoes with mine and reheated the pepper mix and topped my potatoes with it. When you have spread it nice and evenly as possible it is time to roll it. Grab the end closes to you and start to roll it you want to roll it tight, but don't be rough because your pork can rip easily now that you have weakened it buy slicing it thin. If it tears a little that is okay you can tie it up later, just add an extra piece of twine there if needed. A last little note if you like it hot you can always add more spice add a habanero or serrano. Whatever you prefer. Below is a video I found on youtube.com to learn how to cut the loin. I found this video very helpful. I hope you do as well. Also to help visualize the cut I used my knife on the end of the loin and just traced the spiral just so I could imagine the cut and how thick it would be. It helped me. Here is a video on how to properly tie up a pork loin. I actually wish I would have watched it because I didn't know how to tie one properly, but I figure whatever gets the job done. Watching the video I'm confident I can tie it right next time. I hope you find this to be useful. Now it's time to grill it up. I love cooking with charcoal. I got my coals ready and tossed it right over top of the heat. I turned it three times to get all sides with nice grill marks. It should take about 45 minutes to an hour to cook so about 10-15 minutes per side. This is a great dish to enjoy with friends. |
I was just wanting something, something different for dinner. So I came up with the idea for a chicken stuffed onion. I didn't want any tiny pieces off the onion so I cut a wedge out of the onion and then let them soak in some warm water. I slowly peeled the layers of the onion back, being careful not to break any. If you do break one or you feel it's about to break, just stick it back in the water to soak a little more. When all your onions are separate you want to cut them into pieces. Heat your pan to medium low. When your pan is heated up drizzle a little bit of submarine sauce into the pan. Add your onion and drizzle some more on top of the onion. I set mine cut side up first and then let them finish cooking cut side down. Set the onion aside. Cut your chicken up into somewhat small pieces. You don't want them too big or it just doesn't turn out quite right. When you wrap onion around it you want it to just about completely cover it.
We didn't have much around the house the other day so I decided to make a pizza using part of a roast I had left from the night before. I sliced it in thin strips I used a can of original sloppy joe and ready made pizza dough. I brushed the dough with olive oil and sprinkled with garlic powder and basil. I had slices of white american so I ripped into pieces and scattered around the dough. I baked it in the oven at 450 degrees for about 5-7 minutes just to to slightly cook the dough. Take it out and add sloppy joe sauce. I topped mine with diced red onion, roast and on half of it spinach and mushroom. I finished it off with some shredded Pinconning cheese. Bake at 450 until cheese becomes golden brown.
Need: Flank Steak Onion Powder Smokey Mesquite rub Sea Salt Pepper Cooking Sherry Olive Oil I seasoned up my steak with a light coating of onion powder, smokey mesquite rub, salt, and pepper. I let it sit for about 15 minutes after it is all seasoned. I preheat my cast iron skillet and added about 2 tbs. of olive oil and about 2 tbs. cooking sherry. When the pan is heated and ready I added in my steak I cooked it about 20-25 minutes. About 10-12 minutes per side until most liquid in pan is gone and the meat has started to become a dark brown. For this I used a cube steak and cooked it up just like you normally would. I seasoned up the meat with onion and garlic powder and some Applewood rub. I then scrambled up a couple eggs in a bowl with salt and pepper. I made my flour mix with the same seasonings that I used to season the meat. I dipped the steaks first into the egg and then into the flour mix and then repeat. When its gone through the 2 coats of batter, add it to a pan with a thin layer of hot oil. Fry then up til they are golden brown on both sides. Set them on a plate with paper towel to absorb the extra grease. Let them sit for a few while you make the gravy. I try to always have bacon grease around to add into my gravies. Turn your heat to low, depending on how much grease you have add some cornstarch and mix it all in. When it starts to thicken slowly add milk until it is a good consistency. Gravy is all on preference, some like a thicker gravy while some prefer the thinner one. If you need to season with a lil salt and pepper to taste. When the gravy is ready cut up some onion ( I used red onion because it is my favorite onion.) Butter one side of 2 pieces of bread and layer your sandwich ( I used my George Foreman Grill, but you can use a clean pan.)
