We were heading down state to go visit some family and I needed to make a quick dinner for us before we left. Chris got home a little sooner than I had expected so I had to come up with something in a hurry! I decided to slice up rounds of thin potatoes and fried them in some oil in a skillet. I wanted the outside nice and crisp with still keeping some soft to the inside. I didn't have time to heat up the deep fryer so I opted for the skillet. I seasoned the outside of my chicken with some garlic powder, tuscan seasoning, salt, and pepper. I cooked them in a skillet as well in a little bit of olive oil. For this I used a homemade BBQ sauce I was messing around with for the Dr. Pepper contest. Yes I made the bbq with Dr. Pepper it had a nice sweetness to it. Right now I can't tell you how to make it because I might use it for the contest still. It was amazingly good!. When the potatoes come out of the oil sprinkle lightly with salt. When your meat and potatoes are ready, just make a layer of potatoes and drizzle the bbq sauce of your choice on it, not too much just enough to make sure the potatoes get the flavor of it. Top with some chopped onion (I used white onion because I didn't have red or else that would have been my choice. Finish off with a piece of chicken and drizzle your sauce on top! |
